connection sensors to the module esp8266

Hello!
I know that this subject was discussed 100500 times, but on some questions i didn't found answers.
1. I know that esp8266 not tolerant with 5v, but some esp8266 users told me that nothing happen if you connect 5v sensors from 5v power supply and connect 5v data wire from this module to esp8266. Is that true?
If it's not, can it help to use " logic converter level" ?

2. How to connect relay module (5v) to the esp8266?
If I want to open relay, I need to send 5V logic "1" from GPIO to data pin on relay, but I send only 3.3V. I have some " logic converter level", but when i am testing it with multimeter, i can't measure 3.3 or 5 volts. Can this convertors help me?
3. The same question - how to connect 5v IR transmission module?
