NodeMCU 8266 Dev chip seems to shutdown automatically

*****Looks like I had a flaky 8266 chip. I obtained a replacement 8266 and it has been solid since.*****

I am working on a solution for a young man with muscular dystrophy to allow him to control his bed via voice. I have a program running on an NodeMcu ESP8266 Development chip in my lab and have it set to control 4 relays which turn on for a specified time when commanded by Alexa. All seems to work well and I was about to put this into production soon, however last night I thought I would see how this behaved when powered on for days. Last night I used a 1A breadboard power supply to drive the 3.3v for the chip and 5v for the relays. When I woke up this morning, the 8266 appeared to be shutdown/powered off. Thinking it may have been related to the long term use of the breadboard power supply, I then went to a 5v 5a switching power supply for the relays and a 3.3v Power Supply Module to feed the 8266. A few hours later I noticed the same thing, the 8266 seemed to be shutdown/powered off.
