Is this power supply sufficient? 5.0v 700mA? From what I have read via Google, the processor on the typical ESP8266 boards is about 170 mA draw at 5v. So it would seem the 5v 700mA power supply I have is sufficient, providing I am not doing much to draw a lot of current above and beyond the processor?

if it can handle the spikes a esp8266 produces, it should be sufficient. If in doubt use a ~1000ยต electrolytic close to / on the esp module

I take it the voltage rating the capacitor just have to be greater than 5v right? Does not matter if it is rated for 16v or 50v for example?

that is correct. If it is a board with onboard 3.3V regulator you may also put the capacitor on the boards 3.3V rail.
