So I kind of managed to find a person who shared work with an ESP32, garretlab is the name of the site https://garretlab.web.fc2.com/en/arduino/lab/rss_reader_oled_character_display/. It was done with an OLED screen, but this person shares an XML parsing library that has an example code to display news on the serial monitor https://github.com/garretlab/shoddyxml. It's described as 'shoddy', but it worked perfectly well on an ESP32 I have.
Not an ESP8266, but I suppose this is as close as I'll get. Hopefully this will help others who have a similar inquiry.
