Using Serial Tx and RX pins as GPIOs

Hi, I've heard that the TX and RX pins can be used as GPIO pins but im not exactly sure how to do this. I own an ESP8266-12e NodeMCU v2 board. Also, after using it as GPIOs how do u get it back to normal as Serial pins?

I also noticed that there are 3 TXD pins (TXD0, TXD1 and TXD2) but only 2 RXD pins (RXD0 and RXD2). Where is the RXD1 pin? And why is it not given in the pin breakout?
