Which one is the better?
What is it "Ai-Thinker Technology Co. Ltd."?

Ai-Thinker is the module manufacturer.

I cannot find their firmware. Maybe if you know someone who can read Chinese you can see if you can find their firmware on their website.

The firmware you will find online is put out by Espresiiff the company that designs the ESP8266.
You have the latest firmware from them.
