ESP 8266 multiple scales over WIFI

Hello,
I currently have a project where I have to meassure the load of up to 4 weighing sensors and transmit their value wireless to a (Access Point) connected to a display which displays the values.
The sensors and the Access Point are battery powered.
I thoght I would an ESP 12 E connected to a weighing sensor with a hx711 module.
But how should I send the data to the Access Point (also an ESP 12 E)via UDP or is this to slow when each sensor sends his value every half second or second.
Or would it work if I use an Raspberry Pi Zero W with an MQTT Broker running on it.
