help with pin outs

Hi there,
So just got my hands on a couple of the ESP8266 12 chips - and still amazed at how awesome they are.
I have used SONOFF switches before and so felt most comfortable uploading the tasmota firmware.
I have taken my ceiling fan remote (annoyingly 303Mhz so cant use 433) and plan to connect the ESPchip to the 3 different speed settings.
I can customize the module config to allow the GPIO to be 'switch1' and a different IO to be 'switch2' etc.
the ceiling remote looks like it just connects the switch to ground when pressed, and so the part i'm not sure i understand is how a single pin out on the chip can be a 'switch'
All/any advice/help welcomed many thanks
