Project using ESP8266

I am trying to put up a wireless project wherein I will have to collect three parameters in real time and put up these values on a website in form of graphs.
I am new to ESP8266, so a little confused how to go about it.
I am using NodeMCU ESP8266 board so is it better to use LUA editor or Arduino IDE for programming it?
Also, I am confused between using Google Graphs or a JS code for putting up graphs on the website.
Any kind of advice, suggestions or help would be appreciated
