Transition from NodeMCU to ESP based PCB

Hello experts,
I've built and successfully tested an IoT device that includes a NodeMcu, two i2c sensors and output to peripherals: one 5V and the other one 12V. The board is powered by 12V SLA battery. Linear voltage regulator supplies 6V to the NodeMcu and one of peripherals. Peripherals are controlled via ULN2003.
I am using EAGLE for PCB design.
Planning transition from DEV to a small series production using ESP:
1. What would be an appropriate ESP model?
2. Any guidance or a link to a tutorial on the subject of PCB design around an ESP board?
