ESP8266 (ESP-01, ESP-07) resets when touched with a wire

Greetings!

I am experiencing issues with my ESP8266. If I touch it with a wire (not connected to anywhere and I am not touching the other end of the wire) or an oscilloscope probe, it resets.

I have done my homework and made a good power supply (switch mode from 12V wall wart to 5V and then linear AMS1117 3.3 for the ESP, including the recommended capacitors), with 2200uF capacitor near the ESP and an 0.1uF soldered directly onto the ESP (as close as possible). I have also tried decoupling the RST line with a 0.1uF ceramic capacitor. I have a relatively strong pull ups (1k) on RST and other pins that need pulling up or down.

Strangely enough, the resets do not happen if I replace the switch mode power supply with a NiMH 4cell (roughly 5V) battery pack. Resets also do not happen when UART is connected to my computer (GND, RX, TX, no power).

If anyone can help me, I would be very happy!
