I refuse going super-nerd and jumping through all these hoops to get something up and running.

I want one program that installs on Windows, that let my program in C that let me set breakpoints etc
and see all resulting vars and assembly-code were it hits.

I will not use esp8266 in a real commercial product until other employees down the road can update code with a real
commercial compiler ide.

Call up IAR and offer them 1Million Kronor to write a compiler for you chip and then get back to me.
