I had problems like this at the beginning. Changing to a better power supply like you did helped a lot. Did you a add a capacitor across Vcc and GND near the ESP?
I als experienced many unwanted resets like you you have. The majority of these resets disappeared when I added a pulp resistor from RST to Vcc. Before I did that I could cause a reset bay nearing the ESP with a hand.
