I knew if I waited long enough someone would do it for me! ;)
I have built a few ESP8266 PCBs and have one which is great for this.
The photo shows a ESP03 system with OLED, ds18b20, DHT11, BMP085, relay, switch & LED.
Yes - 3 temperature sensors is OTT but the board is primarily for students to play with.

#22631 Hey guys! Below and also on the GitHub page there is now the schematic. The GitHub repo contains the KiCAD sources. I did not add the latest PCB design file, since it is yet not sure that it does work (issue with delivered ESP-03).
Since we work with 230 V: I'm not taking any responsibility for damage or injures happened based on this.
We are still working on it to make it smaller and safer when it comes to the power supply. An isolated buck converter might be a good idea but seems hard to get for a good price.
