I have only 5 and im using them with RTOS problem is , Arduino is much more evolved in I2c for example.... Im having hard times with OLED in RTOS_esp8266
I think it´s overkill to use one esp32 when all you need is a simply logic application...
it´s even overkill to use ESP whole family if you need offline processing I also think...
