If you don't want it to connect to a previously entered AP... switch the ESP from station to AP mode.
One example in a library I'm playing with (sming) uses this as a feature; if there's a problem with connecting as a station to a previously programmed AP, the software disables the station mode and starts up as an AP with the name 'check your configuration'
