In my experience, small WiFi modules like the ESP will always have issues in this kind of setting. I often demo Mirobot at events like Maker Faire and other trade shows and the WiFi is always dropping in and out. The problem with peoples' phones is that they all have WiFi that's constantly looking for networks to join which just adds to the level of noise.
