Yeah, I thought I would check to see if there are any pre-made units available first. I'd really rather focus on making my experimental 'things' than a programmer doodad though.

NodeMCU style boards are pretty cheap, how about buying one, unsoldering the ESP-12 and in its place soldering/gluing on a 4x2 header socket with the wires connected to the pads where the ESP-12 used to be so you can then plug your ESP-01s into the socket.
