If I do it manually, then the recipe is working fine and is sending me an alert, so it's not the URL I've messed up

I don't know anything about maker.ifttt.com ...
Did you try posting on dummy local server such Apache just to figure out ?

I just tried posting to a server I have running, but nothing on Apache accesslog, so I would believe the ESP is not getting out. It is connected to my WiFi as I can access the webpage.
