I've made a start at documenting the various modules - I'd really like to add this info to the first post of this thread but I'll need some help with that...

As well as an exercise in documentation, I discovered the new(ish) module ESP-12. And it seems that there are at least three modules that offer the ADC pin - a variant of ESP-07 with 16 pins, ESP-12 and a module called Dooao DWA8 http://item.taobao.com/item.htm?id=40283571127.
