After taking off the shield I checked over the components to check for solder issues etc. On a hunch I switched out the flash chips between this weird esp07 and a known good esp01, the esp07 is now fully working again. Something must have gone funky with my flash chip. Now to find spare flash chips on farnell

If you can afford waiting for a "slow boat" from China, the W25Q32 or W25Q64 are pretty cheap on eBay or AliExpress ...
