I got the sensors that I mentioned in yesterday and mounted today. They're in a 55 gallon drum, and I have them set to indicate when it's 2/3's and 1/3 empty.
Easy enough to work with, came with a rubber gasket, but I also used some clear silicone to make sure they don't leak.

Another option you might have for the level sensors is an ultrasonic sensor mounted inside a tube (something like an HC-SR04). I have been working on a project (although completely different application) with one of these, and so far it is working great for me. I could see it set up so that it would measure the water level inside the tube, and you can set your limits based on how far from the sensor the water level is.
