AFAIK the EX has two more GPIOs , an ADC and an extra UART

Where do you see this information? I haven't been able to locate any documentation that says anything like that.
Understandably we're all going off of scraps and bits of information, but it would be helpful to post your sources or attach the documentation that you found this so we can all benefit.

Some of the guys on forum have signed an NDA with Espresiff and get full documentation/sources from them 
What is the procedure of signing those NDA documents and getting all information one needs?
